A PLACE TO VISIT: ZATAR FALAFEL & HUMMUS

Hello lovely people! So today I thought I would share my feedback or something like that (I am not by any means a professional critic) because it might be useful for some of you that might pass by this place! Or it would be at least interesting to read (I really hope so, haha!)

So this place called Zatar falafel & hummus is a vegan bistro in Vilnius (the capital of Lithuania). It is in Vokieciu street which is in the Vilnius’ old town, near Vilnius Town Hall. So the location is really convenient for both the tourist and the resident. Zatar is actually the first falafel and hummus bistro in Vilnius!

The first impression of the interior was really good. Even though it was a bistro (which often tend to have a kitschy decor), it was surprisingly minimalist and modern. On the walls of the bistro there were many pots with various plants, which add a really nice touch of nature. Wood surfaces (table tops, stairs) made this place even cosier.

Now about the menu. When I first saw it, I thought that the variety of dishes is not that wide, but later on I understood that it is a sign of freshly made, good quality food. I chose a falafel plate. There were also some snacks, such as hummus with carrots, salad, vegan desserts, drinks… I will definitely have to visit this place sometime soon!

I took about 20 minutes for the chefs to make the dish, which is quite a long time since it is a bistro. It was lunchtime when I went there, so there were a lot of people seeking for a free table and ordering food at the bar. And as a result they ran out of hummus and tzatziki sauce, which was quite disappointing.

However, when my dish was finally made I was a little bit surprised by how amazing the plate looked. It wasn’t anything like those servings in many fancy restaurants, but it was simple, yet playful and colorful.

As you can probably tell from the picture, all the food seemed to be well-arranged in the plate. No mess or mixed products (who likes that watery salad?)

Now about the taste. It was my first time trying falafels, but they definitely proved to be not an everyday-dish. I loved the spices, pita bread, fresh salad and the crust of the falafels. The sauces were not so good, I really expected them to be rich in flavor, but actually, they were weak and a little bit tasteless. However, the falafels themselves put the dish right! If you haven’t tried them, you definitely should at least once! I would absolutely recommend doing that, haha!

SWEET VANILLA RISOTTO WITH ZUCCHINI AND APPLES

For 2 people:

  • 1 1/4 cup risotto rice
  • 2 1/2 cup water
  • 1 small apple
  • 1/2 zucchini or summer squash
  • 50 g dried fruit (raisins, cranberries or apricots)
  • 50 ml milk (you can add more or less, it depends on how you prefer)
  • 1/2 tspn vanilla sugar (you can replace it with some vanilla extract)
  • 1/2 tspn cinnamon
  • a pinch of salt

First of all, you will need to pour all the water and rice into a pot and put it on a medium heat, add a pinch of salt. Rinse your favorite dried fruit (I used dried cranberries and raisins) and add them into the pot as well.

You should read the instructions on the package, but you will probably have to wait about 12 minutes (until the rice absorbs all the water). While waiting, you can prepare your veggies: take a half of zucchini and grate it. You can do the same with your apple, but you can also cut it into small cubes.

When there is no water left in a pot, pour in some milk and wait until it starts to boil. Add all the grated zucchini, apple cubes, some cinnamon and 1/2 teaspoon of vanilla sugar. Reduce the heat to low and put a lid on. Wait a couple of minutes and then serve this delicious risotto with honey, fresh fruit, some kind of jam or however you like! Enjoy!

MY TRIP TO CRETE, GREECE. PART 2: GREEK CUISINE!

Hello everyone! So today I thought it’s about time to share the second part of „My trip to Crete, Greece“ series. Today I’m going to talk about Greek cuisine!

If you want to try some traditional Greek food, you should seek for small taverns. They are probably the best choice for a cozy environment and a good-quality Greek dishes!

During this trip I actually didn’t go all crazy trying national dishes. However, I tried some things that I haven’t before! So these are my observations:

  • Olives and olive oil. You can easily notice fields of olive trees while travelling by bus or by car, especially on the islands. The climate is just perfect for them: the sun is always shining and it is warm all-year-round… Olive oil is probably the most characteristic element of Greek cuisine and it is used in most of the dishes, such as Greek salad (horiatiki), tzatziki (which is a dip made of Greek yogurt, cucumber and garlic) or lachanosalata (a cabbage salad). Olives are also often used in many dishes or served alone, as a snack. You can find many different kinds of olives in souvenir shops or local markets. Probably the most popular ones are Kalamata olives (that are large, plump olives with a smooth texture). They were actually named after Kalamata city, which is in Peloponnese, Greece.

  • Herbs. One of the most traditional herbs used in Greek cuisine is thyme. Other common flavorings are mint, garlic, onion, dill, basil and bay laurel leaves. They are used in many Greek dishes, such as Dakos (a slice of dried bread topped with crumbled feta cheese and chopped tomatoes) or Greek salad. You can find a variety of traditional herbs in many souvenir stores.

  • Feta cheese, which is made in Greece from sheep’s milk or sometimes from a mixture of sheep and goat’s milk. Obviously, it is the most commonly-used cheese in Greece. Not to mention all those popular dishes, but it is used in many others, such as Spanakopita (a pastry pie filled with spinach and feta cheese), Tirokafteri (a spread dip), Roasted florina peppers are often stuffed with this cheese and many herbs and many other dishes.
  • Pita bread. Have you tried it? Because if you haven’t, you definitely should! It is quite easy to find at stores or even bake it at home and it could be used in many different dishes! A popular fast food in Greece is Gyros (roasted meat, wrapped with many vegetables and a sauce like tzatziki). Pita bread can also be used to scoop dips or sauces such as taramosalata (which is made of blended roe mixed with mashed potatoes or bread crumbs, olive oil, lemon juice and vinegar).
  • Greek yogurt. Not only it is used as a base for tzatziki dip, but as a dessert too! It is served with some honey, syrup or canned fruit! This type of yogurt is usually made from sheep’s milk, but nowadays some companies use cows milk to make it. Greek yogurt is also a nutriotious choice: it is high in protein (it has twice the protein content of regular yogurts!), vitamins B6 and B12, potassium, protein, zinc and calcium just as all the yogurts. Is it time for snacking? Haha!
  • Pastry. As you already know, it is used in some main dishes that I’ve already mentioned in this post, but it is also widely used in bakery! Baklava, bougatsa are both pantry-based desserts also filled with many other ingredients. Actually, many Greek desserts are similar to Turkish sweets! They are made out of nuts, honey or syrup, dough or pastry… They are so sweet that after a one or a couple sweets you will probably want to have a drink!

So that’s about it! I hope that you enjoyed reading my notes on Greek cuisine. Even though I haven’t tried all the dishes I have mentioned there, I would absolutely love to come back to Greece or Crete soon and visit many other objects as well as trying some new foods because they are absolutely delicious!

DELICIOUS CHEWY FUDGY BROWNIES!

Hello everyone! Today I decided to make some homemade brownies and let me tell you: they were INSANELY delicious! I had some friends to come over and they loved them too! So if you are a brownie-lover just like me (because who is not? Haha!), you simply have to try out this recipe!

You will need:

  • 200 g dark chocolate
  • 250 g butter
  • 3 eggs
  • 200 g sugar (you can use brown sugar mixed with white sugar so the brownies would get a delicious caramel-ish taste to them)
  • 1/2 cup nuts (you can use nuts of your choice, but I used a mix of hazelnuts, walnuts and almonds) (optional)
  • 150 g all-purpose flour
  • 2 tbspns unsweetened cocoa powder
  • 1/2 tspn baking powder
  • a pinch of salt (it helps to reveal the taste of dark chocolate)

Take a pot, fill it with water and let it boil. Place a big bowl on top of the pot. Add all of the chocolate into the bowl as well as 250 grams of butter. Let it melt. Take a bowl, mix 3 eggs with sugar just for a little. In a separate bowl, mix flour, cocoa powder, a pinch of salt and 1/2 teaspoon of baking powder. Using a whisk, mix the egg mixture and slowly pour in melted chocolate. Pour in the flour mixture and combine everything well.

If you decided to use nuts, you just have to roast them a little in a hot pan. Then you will be able to remove some of the peels that are bitter. Chop the nuts and add them into the batter.

Line your baking tin with parchment paper. Then, you can pour in the batter. Preheat the oven up to 175ºC (347ºF) and bake for about 25 minutes. When your brownie is baked (it should be soft and a bit wet) you should let it sit until it is completely cool.

Cut it into medium-sized pieces and serve it with fresh strawberries or ice cream. Enjoy!

WHITE CHOCOLATE CHEESECAKE WITH BLUEBERRIES

Hello guys! Today I am sharing this super quick white chocolate cheesecake recipe, which is absolutely delicious! You can try this on a special occasion or even on a lazy afternoon. This cheesecake takes only about 20 minutes to make and at least 4 hours to sit in the refrigerator.

For a 26 cm baking tin:

  • 340 g biscuits (you can use any cookies or biscuits of your choice)
  • 100 g butter
  • 670 g mascarpone
  • 400 g cottage cheese (you should mash it if it has any bigger chunks)
  • 270 g white chocolate
  • 1,5 tbspn sugar
  • 400 g blueberries (or any other berries, such as strawberries or raspberries)

First of all, you have to prepare the biscuit base for the cheesecake. Take a pot, put in 100 grams of butter and let it melt. Reduce the heat to medium and using a spatula to stir it, let the butter brown a little so it would get a delicious nutty taste to it. Be careful- do not burn it!

Then, add all of the biscuits into a food processor (or any other kitchen device that you have) and let it pulse them until a breadcrumb consistency. Pour in the melted butter and combine everything well. Take a 26 cm baking tin and line it with parchment paper so the crumbs would not stick to the tin. Pour the crumbs into the tin and put it into refrigerator for about 15 minutes.

You can now prepare the mascarpone filling. Take a big bowl, add in all of the mascarpone, cottage cheese and mix everything well. Take a pot filled with water and place a bowl on top of it. Put it onto the stove and wait until the water starts to boil. Put all of the white chocolate into it the bowl and let it melt. This technique helps to melt the chocolate without burning it. Slowly pour the melted chocolate into the mascarpone and cottage cheese mixture and combine everything well. You can now add rinsed blueberries and carefully mix them in, but do not crush them!

Take the baking tin from the refrigerator. Pour the filling on top of the biscuit base. Put your cheesecake into the refrigerator for at least 4 hours or even overnight. Enjoy!

APRICOT AND BLUEBERRY PIE

For the crumbs:

  • 40 g cold butter
  • 80 g all-purpose flour
  • 40 g brown sugar
  • 1 tspn cinnamon

For the pie:

  • 400 g apricots
  • 200 g blueberries
  • 150 g vanilla yogurt
  • 2 tbspns milk
  • 200 g room temperature butter
  • 230 g all-purpose flour
  • 180 g brown sugar
  • 3 eggs
  • 1,5 tspn baking powder

First of all, prepare the crumbs. Just add all of the ingredients into a blender (or any other similar gadget that you have) and mix everything well. Pour the crumbs into a food container and put it into a freezer.

Then, prepare the fruit. Just rinse them nicely, cut all of the apricots into halves and pit them.

Preheat the oven up to 180ºC (356ºF).

In a bowl, beat all three eggs using an electric mixer until they are fluffy and foamy.

Take a blender again, pour in all of the flour, brown sugar, baking powder. Add in the butter, eggs and milk. Mix everything well. Line a 20×30 cm baking pan with parchment paper. Pour the batter into the pan, put it in the oven and bake for about 20 minutes.

Remove the pie from the oven. Take the yogurt and spread it all over the pie. Place the apricot halves on top, then the blueberries. Carefully pour the crumbs on top (be careful because there might be bigger frozen crumbs that you just have to crumble). Bake the pie for another 20 minutes in the same temperature.

Serve this pie with a scoop of vanilla ice cream or just drizzle some raw honey on top of it. Easy yet mouth-watering!

DIY HOME REMEDIES FOR BEAUTY- OUT OF LEFTOVER FOOD & DRINKS!

We all love a little recycling, and I think  it’s important that we know what to reuse and repurpose, especially when we want to save up a little money and find some new, interesting ways of making DIY beauty products.

It’s quite obvious to all of us that when we cook or bake we tend to throw out all the stuff that we may think is not useful to us anymore. However, we can recycle at least half of the stuff that we toss into the trash bin – let me show you how to do it!

Coffee grounds. Everyone loves a good, steaming hot cup of coffee in the mornings. However, most of us throw out the grounds without even thinking twice – but wait! Did you know that coffee grounds can be used as an amazing body scrub? Coffee has healing and antioxidant properties, it helps with cellulite and baggy, dull-looking skin that needs to be revived. Here’s my favorite recipe of the homemade coffee body scrub!

TONING COFFEE BODY SCRUB

You will need:

  1. Half a cup of coffee grounds (just use the leftovers from your morning coffee)
  2. 1/3 cup of honey (preferably raw)

How to make the scrub:

All you need to do is mix the two ingredients together and there you have it!

How to use it:

I would suggest using this scrub only on your body as the coffee grounds tend to be a little too harsh for facial skin – so hop in the shower, exfoliate really well, wash off and enjoy your soft, smooth and toned skin!

Apple peels. Say you’re baking an apple pie and you have a bunch of apple peel lying around – the first thing that would pop into your mind would be to throw them out, but let me tell you a little secret – apple peel is even more special than the apple itself! Apple peels are packed with loads of vitamins such as vitamin A & C, it also holds a lot of zinc, sodium and magnesium, and they’re also amazing antioxidants!

So grab your leftover apple peels and let’s get going!

SOOTHING, HEALING FACE MASK

You will need:

  1. A handful of apple peels
  2. Two tablespoons of plain white yoghurt
  3. Two tablespoons of honey (again, preferably raw)

How to make:

Grab your blender and throw in the apple peels, the yoghurt and the honey. Blend it all really well so you’d be left with a smooth paste.

How to use:

Apply the mask all over your face and massage it in circular motions. Leave it on for about fifteen minutes and wash it off after that – your skin will instantly feel flawless and soft as a baby’s bottom!

Orange/tangerine peels.  When I think of oranges and tangerines, one word pops into my head almost instantly: winter. So when you have a ton of guests over on that snowy Christmas day, eating those tangerines and oranges so fast that you can barely catch a glimpse, don’t let them throw out the peels! Make sure you collect them in a bowl and reuse the goodies later – here’s how!

CLEANSING, ANTI-DANDRUFF HAIR RINSE

You will need:

  1. A handful or orange/tangerine peels, fresh
  2. Half a cup of green tea
  3. Half a cup of mint tea

How to make:

Grab the citrus peels, put them in a cup (just use your regular tea or coffee mug) and put some boiling water over them as if you were making tea. Let the water get completely absorbed (for about 5-10 minutes) with the citrus juice. Place some mint & green tea bags into two other cups and boil as well. After that, let it all cool down and mix together.

How to use:

Wash and condition your hair as usual and, after that, just pour the hair rinse over your locks. I would recommend keeping it on for about three to five minutes (just wrap your hair up in a towel) and then rinse again with clean, preferably lukewarm water. The zesty acids in the citrus juice will instantly help reduce buildup and germs on your hair, providing it a smooth, clean and silky feel whilst disinfecting and healing your scalp, thus getting rid of dandruff.

P.S.: I would not recommend people with very sensitive, easily irritable scalp skin use this hair rinse as the citrus acids may be a little too harsh for you! If you must, you can avoid pouring the liquid on your scalp and just go lower than that – it’ll cleanse and make your hair silky without irritating the skin!

Egg yolk/egg white. We all know those recipes where they ask you to separate the egg yolks from the egg whites and only use one, don’t we? It’s rather annoying and I always end up with the thought: “What the hell am I supposed to do with the other half?”. But it’s fine, I got you! You don’t have to throw out neither the egg yolks nor the egg whites – I have two little beauty recipes that will be very handy when you’re dealing with this problem.

MOISTURIZING EGG YOLK FACE MASK FOR DRY, LIFELESS SKIN

You will need:

  1. 1 egg yolk
  2. 1/3 of a banana
  3. ¼ of an avocado

How to make:

Just pop the banana & avocado into a blender and blend well, and mix the paste with the egg yolk afterwards. Easy, isn’t it? And so effective!

How to use:

Apply the face mask on clean skin, keep on for about fifteen minutes and rinse off after that. Your skin will instantly feel smoother and softer! It’s the perfect DIY deep moisturizer for your skin as the avocado, egg yolk and banana provide a lot of moisture & healing to soften and soothe your dry, itchy and flakey skin.

ANTI-ACNE & ACNE SCAR FADING FACE MASK

You will need:

  1. 1 egg white
  2. 1/3 juice of one lemon
  3. 2 tablespoons of honey (yet again – preferably raw!)

How to make:

The recipe is easy breezy – just mix all the ingredients together and that is all!

How to use:

Apply all over your face, leaving it on for about fifteen to twenty minutes and rinse off afterwards. Egg whites are known for their ability to shrink pores and help with very oily skin, whilst the lemon juice and the honey are packed with loads of vitamins to heal and protect your skin! This mask is absolutely amazing for those of you who struggle with severe acne – try it out and it’ll help you loads!

Alcoholic drinks. So you just had a party – it was great and extremely fun, you drank wine, whiskey and other alcoholic drinks and danced all night, but the only problem is the morning after. You have nearly empty bottles of wine and spirits lying around, and you’re about to pour the remains out into the sink, but hey! Stop for a moment! Most alcohol can be used in so many ways that you’ll be surprised. Here’s how to make a few DIY products out of all that alcohol to revive that dull and pale skin after all that partying.

GREEN TEA & VODKA FACIAL TONIC

You will need:

  1. A cup of brewed green tea
  2. A teaspoon of vodka

How to make:

My goodness, these recipes are so simple and quick that the “how to make” section barely has any purpose, but hey – just in case anyone gets confused! Basically, you just mix the two ingredients together.

How to use:

Grab a cotton pad, soak it in the toner, apply it all over your face & wash it off after that. Green tea is the perfect antioxidant, preventing aging and skin irritation whilst the vodka acts as an antiseptic and also cleanses your skin from bacteria that cause break outs and many skin infections.

I hope that these little tips & tricks helped you out at least a bit – I know they saved my life many, many times now and made sure that I made the best out of the excess food/drinks I’d have left. VEGAN BERRY BLAST SMOOTHIE

You will need:

  • 1,5 ripe bananas
  • 3/4 cup oat milk (or any other milk of your choice)
  • 1 cup strawberries
  • 3/4 cup sweet cherries
  • 1/2 cup frozen blueberries
  • some ice cubes

First of all, obviously, you will have to prepare all the fruit! Rinse all of them, peel the bananas and add them to the blender. Then, pit 3/4 cup of sweet cherries and add them to the blender as well as 1/2 cup of blueberries. Remove the leaves from strawberries if there are any, and pour those berries into the blender. Pour in some milk and mix everything well. Add the ice cubes and mix again. Enjoy!

MY TRIP TO CRETE, GREECE. PART 1: MEET THE ISLANDS!

Hello there lovely people! It is actually my second attempt to write the first part of My trip to Crete, Greece series. It is because the whole post just decided to disappear. However, it haven’t stopped me from writing again!

So as you can see from the title, this post is going to be about the islands of Greece! To begin with, I’ve actually have never been to Crete or even Greece before, so I was really excited to go on this trip.

Me and my family travelled to Crete by plane, so had an amazing opportunity to appreciate the amazing view of the Mediterranean and the Aegean seas. We arrived at Nikos Kazantzakis International Airport, which is in Heraklion, the largest city in Crete. The weather was absolutely incredible! It was hot and sunny, the sky was so clear!

After that, we took a bus and taxi to finally reach our hotel. It was located somewhere between Rethymno (a city of approximately 40,000 habitants, which is also rich with ancient history) and Georgioupoli (a smaller resort town). The hotel was very luxurious (it seemed so to me, haha!) It had two pools, private beach, gym etc. The personal was very friendly and helpful, which made our holiday even better.

On the fifth day of our trip we decided to visit Santorini (or Thira), an volcanic island famous for its unique architecture and history. We took a ferry to travel there because there is obviously no other way to reach the island (unless you have a helicopter!) Santorini atracts thousands of tourists from China, Russia, Japan, France and many other countries every year. It is very popular to spend a honeymoon there, even though the prices of hotels are very high comparing to Crete. Santorini is said to be the most expensive island in Europe! However, I’d definitely suggest visiting this place at least once in a lifetime! The island is surrounded by a stunning scenery: the blue Aegean sea, other uninhabited islands, such as Palaia Kameni, Nea Kameni (which is also a protected scientific site), Aspronisi… And you can’t forget Oia and Fira, two biggest towns in Santorini, famous for their white and blue small houses.

You can easily find small restaurants and cafes  that have a view to the sea. Have a cup of freddo cappuccino (cold cappuccino) and just relax.

Me and my family also visited Rethymno and Chania (the second largest city in Crete). In the small, winding streets of these cities there are many taverns and souvenir shops where you can buy Greek food and drinks, colorfully embroidered tablecloths and many other things.

Can we just take a moment to appreciate this tiny bookshop? I could’ve spent all the day here…

On the last day of our holiday we decided to go on a hike down the Samaria gorge. The route is about 13 kilometers long, plus 2 kiometers to the port. Let me tell you: it was so hard! My legs ached two days after that… But the good thing is, we had some leisure time in a small town near the port, so we went swimming to Libyan sea and had some drinks in a small tavern.

The scenery is simply stunning! It is nothing like any other mountains I’ve seen before. Furthemore, these are one of the highest ones in Crete!

Rocky tracks made it even more difficult to hike. Prepare a good pair of footwear!

So that is about it! I didn’t go to many other places because my family wanted to relax a little bit more. But our tour guide said that Crete should be visited at least twice: once you should stay more in the west and once in the east.

However, I had an amazing opportunity to meet some Cretans. I even went to a tzatziki making course! Don’t worry, I will share a recipe with you!

Can you believe it? Because I simply can’t! It’s been more than a year already since the first post in this blog!

Oh, what a year it was! Full of amazing experiences, adventures, some traveling, meeting new people… Not to mention all of the cooking experiments!
