CHOCOLATE ZUCCHINI CAKE

Serves 12:

  • 3 eggs
  • 200 g sugar
  • 1 cup canola oil
  • 280 g all-purpose flour
  • 150 g unsweetened black chocolate chips
  • 30 g cocoa powder
  • 2 small zucchinis (you will need 250 grams of grated zucchini)
  • 1/2 tspn vanilla extract
  • 1 tspn baking powder
  • 1/2 tspn salt
  • 1/2 tbsp powdered sugar (optional)
  • mint leaves (optional)

In a large bowl, pour in canola oil, sugar, vanilla extract and crack in 3 eggs. Mix everything well using a mixer. Take another bowl, and add in flour, baking powder, a pinch of salt and cocoa powder. Use a flour sifter to sift the mixture into the batter. This step will make cake softer and fluffier. Now you can prepare zucchini. Rinse well two small zucchinis and peel them (you can obviously skip this step if your zucchinis are from your garden). Grate these zucchinis and add them into the batter as well as chocolate chips (you can chop a bar of chocolate if you couldn’t find any chocolate chips). Take a 30×12 cm baking pan (or any similar of your choice) and cover it with parchment paper so the batter wouldn’t stick to the baking pan. Preheat the oven up to 180ºC (356ºF) and bake for about 55 minutes or an hour. If there is a crust on the top of the cake when it is not done yet, cover it with foil and put it back in the oven. Enjoy!

You can serve this cake with a little bit of powdered sugar and some mint leaves. If it has stayed for about 2 days (which is not very likely haha) make some hot chocolate sauce and pour it on a piece of this cake. Just one ball of vanilla ice cream and it gets even more mouth-watering!
